QUICK TREAT! EGG-FREE MUG CAKES

I made these quick and easy treats in less than 5 minutes! These are egg-free because, I'm not allergic to eggs, I just didn't have any eggs in the fridge. But they're good to make for those of you who can't eat them or just ceebs to go to the shop! With just a few basic ingredients here's how!

You will need everything pictured above
- A microwavable mug 
- 2tbsp soft butter
- 3tbsp (preferably) brown sugar/muscovado
- 4tbsp self raising flour
- A pinch of salt
- 1tbsp cocoa
- 2tbsp semi-skimmed milk
- 1tspn vanilla extract (optional)
- Some chopped up chocolate (I find dark works best)
- Something to dollop on top - I used white chocolate
Double to make 2, double againt to make 4 etc!

Method!

 Pop the butter into your mug(s) and microwave for about 10-20 seconds until it is completely or more or less melted.

Add the cocoa and whisk together with a fork.

 Next, drop in the sugar, vanilla (if using, I didn't) and the milk and give the mixture another good mix.

 Carefully spoon in your 4 tablespoons of self-raising flour, a pinch of salt for flavour and mix in gently. You could also add a teeny weeny weeny amount of baking powder if you want a super duper humongous rise on dat cake.

Add some chopped up dark chocolate and give the cake(s) a final wizz. I find dark chocolate is better for cooking as milk tends to lose it's flavour when cooked. You could also add dried cranberries/other fruit or chopped nuts. 
 Finally, whack your mug cake in the microwave (one at a time if you have more than one) for either:
1min45sec for a 600W Microwave
1min30sec for a 800W Microwave
1min15 for a 1000W Microwave

If you're going all out on the chocolate front, I recommended stopping the cooking about 10 seconds earlier, scattering some chopped up white chocolate and returning to the microwave for the remaining 10 seconds for a gooey, creamy top to your top notch mug cake.

Eh, viola! A perfectly light and fluffy dessert made in no time at all, best eaten when hot! Why not add a dollop of ice-cream on there too? It's already a kidney destroyer, why not make it a heart attack as well? Bloody worth it. 




Just a thought....
Experiment with cooking times, maybe a lesser time would create a gooey molten chocolatey centre
Swap the cocoa for flour and a dribble of lemon or lime juice for a more delicate flavour
Try adding coconut shavings, almond flakes, everything and the kitchen sink and see what flavours you can conjure up
